A clear and brilliant color with light tints of green. The nose shows freshness with a mixture of aromas: flowers, citrus, and herbs (particularly the scrubland of Provence). The first taste is crisp; in the mouth the wine develops the elegance of white fruit. Round and crisp on the palate, with a fresh and fairly mineral finish. A fabulously pure and delicate white wine.
Enjoy as an aperitif, with a selection of shellfish, or with grilled white fish.
Grapes are harvested manually in small (30kg) crates and are sorted in the vineyard and on a sorting table.
Light pressing by pneumatic press. Fermentation at low temperature (60°F) to preserve the aromas. Light fining process, with clarifying by natural sedimentation.
