Bright yellow color with light golden tints. The nose is complex, with a mixture of aromas such as ripe apricot, exotic fruit, and gingerbread. In the mouth the wine is full and mellow. The finish is powerful and lingering; it ends on a delicate, grilled note coming from the barrel. A fabulous wine, with amazing balance for its 30% barrel maturation. |

This white wine will pair well with a sea bass filet infused with marjoram, duck liver pâté, and figs. |

Grapes are harvested by hand in small (30kg) crates and are sorted in the vineyard and on a sorting table. |

Light pressing (pneumatic press). Fermentation at low temperature (60°F) to preserve the aromas. End of fermentation and maturation in new oak barrels for months (for approximately 30% of the wine). Light fining process, with clarifying by natural sedimentation. |
