The flagship of Château Calissanne, this cuvée is made with Mourvèdre and Syrah. Seductive elegance and concentration (characteristic notes of cedar, incense and garrigue). A wine of great character. Serve at 61°-64°F. Decant 2 hours before drinking. Coffee notes are followed by scents of cedar, antique wax, and honey. A rounded, smooth attack; raspberry notes blend with spicy tobacco aromas (cigar), undergrowth, and musk. Linear in structure, and a mouthfeel with no rough edges. Very elegant! |

Suited to elaborate cuisine involving red meat (grilled or in sauce), poultry, and large or small game (partridge, pheasant, hare, etc.). Also a harmonious match for a cheeseboard. |

Grapes are hand-picked in the second half of September. |

Once delivered to the winery, the grapes are immediately destemmed and then chilled. Vinification lasts three weeks in small, temperature-controlled vats. Where necessary, the cap undergoes moderate pumping-over during the maceration phase. The wine is then siphoned out of the vinification vats into oak barriques (225 liters) and demi-muids (600 liters). The wine undergoes malolactic fermentation in the barrels, continues to mature for 12-18 months in the air-conditioned ageing cellar, and is then bottled. Rocher Rouge is kept for at least one year before being marketed. |
