Château de l'Escarelle
Coteaux Varois en Provence
Grenache, Syrah, Cabernet Sauvignon
Deep red with a purple hue and intense aromas on the nose. With a round, supple palate, this wine is considered one of the jewels of the Chateau. It is meant to be consumed at room temperature and to last 7 to 10 years.
Pairs well with terrines, game birds, and strong cheeses.
Grapes are harvested at night to take advantage of cool temperatures and prevent oxidation.
Traditional methods. Careful attention is paid to each parcel, with organic fertilizer used throughout the estate. Process includes total destemming to preserve the integrity of the fruit, a long maceration period (3 to 5 weeks) for optimal extraction of tannins and aromas, and aging in oak barrels for several months.
The estate features old vines planted in calcareous rock soil. The low-yield parcels lie at the foot of the Loube Mountain in the higher-altitude portion of the property, which receives abundant sunshine in a quasi-continental mesoclimate.
