Côtes de Provence
80% Rolle, 20% Sémillon
Pretty robe with green and yellow tinges. Powerful nose of hawthorn and honeysuckle. Well balanced, fresh, and velvety with a touch of exotic fruits and citrus.
Pairs well with seafood and apple pie.
The 2008 harvest took place August 28-31.
Direct pressing in pneumatic press. Juice settled under cold storage for several days. Barrel fermentation under regulated temperature of 61°F. Half is aged in vats.
